Sorry to break it to you, but it’s probable that you have been lied to your entire life. The paella you know and love with chicken, chorizo and shellfish, is not actually real paella. I’ll let that sink in!
Paella originates from Valencia in South Eastern Spain and is traditionally made with rabbit, snails, chicken or duck and green beans. Avoid the tourist traps selling fake soggy paella and look for somewhere serving the Valencian ‘good stuff.’ You will not be disappointed and you’ll taste paella like never before!
